Roast Lamb Cutlets and Cherry Tomatoes2014-09-19

A delicious lamb recipe that is easy to make and full of flavour.
- olive oil, for baking
- 8 lean lamb cutlets
- 12 cherry tomatoes, halved
- 3 cloves garlic, crushed
- 1 tbsp grainy mustard
- 2 tbsps fresh thyme, chopped
- sea salt and freshly ground black pepper
Preheat oven to 200°C. Sprinkle olive oil over the base of the baking dish.
Lay tomatoes and cutlets in the dish, rubbing them with the oil. Cover cutlets with crushed garlic, mustard and 1 tablespoon thyme, season with the salt and pepper.
Place in the oven and cook for 25-30 minutes, turning once, until the cutlets are browned and crispy.
Garnish with the rest of the fresh thyme and serve with garlic green beans.
