Roast Pork Fillet with Potatoes2016-05-26

- 800g pork fillet
- 1⁄4 cup teriyaki sauce
- 340g baby potatoes, halved
- 1 tbsp olive oil
- salt and freshly ground black pepper
- 4 garlic cloves
- 1 cup mushrooms, quartered
Preheat oven to 180°C. Brush the pork fillet with the teriyaki and place in a baking tray.
In a large bowl, toss the potatoes with the olive oil, garlic, salt, and pepper until coated. Arrange potatoes in a single layer in the bak- ing tray next to the fillet.
Roast in the oven for 1 hour. Remove from the oven and toss the mushrooms with the potatoes. Return to the oven and roast for another 30 minutes until the potatoes are tender and the pork is cooked through.
