Ingredients
- 3-4 red peppers, roasted
- 1⁄2 cup pecan nuts, finely chopped
- 1⁄2 cup bread crumbs
- 1⁄4 cup olive oil
- 3 cloves of garlic, finely chopped
- 2 tsps balsamic vinegar
- 1⁄2 tsp salt
- 1⁄4 tsp freshly ground black pepper
- 1⁄2 tsp chilli flakes
- 2 tsps lemon juice
- 1 tsp ground cumin
Method
Step 1
If you are using fresh red peppers, roast them in a 180°C oven until charred, put them in a zip lock bag and let them sweat. Peel and add to a food processor. Process until finely chopped, almost puréed.
Step 2
Combine everything else in the food processor or in a bowl and process/stir until well blended. Taste and season well. Chill until needed. Serve with chips, crackers or breadsticks.
