Roasted Plums with Sage & Honey

Eat over ice cream, roasted pork, seared duck breasts; with pumpkin Soup, swirled into yogurt or served with roasted root vegetables.

Ingredients

  • 30 plums
  • 3/4 cup honey
  • Salt and Pepper
  • 1/4 tsp freshly ground pepper
  • 1 bunch fresh sage
  • 1 cup water
  • 2 tbsp white balsamic vinegar (or white wine vinegar)

Method

Step 1

Preheat Oven 180
°C.

Step 2

Split and halve plums, drizzle with 1/4 cup honey and roast till soft with sage for 30 minutes. Discard sage.

Step 3

Make the Syrup: Boil slowly: 1/3 cup honey, the water and vinegar to form a syrup (Check with thermometer 220F).

Step 4

Add plums to syrup and return to boil until preserve is thick (220F)
 Ladel into hot sterilised jars. Delicious.
