Roasted Plums with Sage & Honey2014-09-11

Eat over ice cream, roasted pork, seared duck breasts; with pumpkin Soup, swirled into yogurt or served with roasted root vegetables.
- 30 plums
- 3/4 cup honey
- Salt and Pepper
- 1/4 tsp freshly ground pepper
- 1 bunch fresh sage
- 1 cup water
- 2 tbsp white balsamic vinegar (or white wine vinegar)
Preheat Oven 180 °C.
Split and halve plums, drizzle with 1/4 cup honey and roast till soft with sage for 30 minutes. Discard sage.
Make the Syrup: Boil slowly: 1/3 cup honey, the water and vinegar to form a syrup (Check with thermometer 220F).
Add plums to syrup and return to boil until preserve is thick (220F) Ladel into hot sterilised jars. Delicious.
