Eat over ice-cream, roasted pork, seared duck breasts, with pumpkin soup, swirled into yoghurt or serve with roasted root vegetables.
- 30 plums
- 3/4 cup(s) honey
- 1 bunch fresh sage
- 1 cup(s) water
- 2 cup(s) white wine vinegar
Preheat Oven 180 °C.
Split and halve plums, drizzle with 1/4 cup honey and roast till soft with sage for 30 minutes. Discard sage.
Make the Syrup: Boil slowly: 1/3 cup honey, the water and vinegar to form a syrup
Add plums to syrup and return to boil until preserve is thick Ladel into hot sterilised jars.
