Rocket, Feta & Red Pepper Salad2014-08-27

Rocket is an aromatic peppery salad green. It is also known as roquette, arugula and rucola, and is popular in Italian cuisine.
- 1 large head of leafy green lettuce
- 1 handful rocket
- 300 grams feta cubes
- 3 large sweet red peppers
- 2 tablespoon(s) olive oil
- croutons and/or toasted sesame seeds
- 1 cup(s) black olives
- balsamic vinegar for drizzling
Wash lettuce and remove rocket leaves from their stems, rinse, and dry thoroughly.
Cut away the stems and ribs of the red peppers; discard the seeds. Roast or grill till they are soft and blackened. Rub off skins and slice peppers into fine strips.
To assemble, tear the lettuce leaves into bite-sized pieces and combine with the rocket.
Divide among 6 chilled salad plates. Add peppers, feta cubes and croutons. Drizzle each plate with Balsamic and Olive Oil.
