Rump Steak Salad with Tomato Mushroom Dressing

Ingredients
- 1kg rump steak, in one thick piece
- 1 cup red wine
- 1/4 cup vegetable oil
- 1 clove garlic, crushed
- freshly ground black pepper
- 1 tbsp oil, extra
- 1 bunch of watercress
- TOMATO MUSHROOM DRESSING
- 2 tbsp oil
- 2 tsp lemon juice
- 1 clove garlic, crushed
- 2 medium tomatoes, peeled and deseeded
- 1 tbsp shredded continental (flat leafed) parsley
- 60g baby mushrooms, sliced
- freshly ground black pepper
Method
Step 1
Trim steak of all fat and place in a shallow non-metal dish. Combine wine, oil, garlic and pepper, pour over steak. Cover, stand for several hours, turning occasionally, refrigerate over night.
Step 2
Drain meat, wipe dry with paper towels, brush with extra oil. Grill for about 7 minutes each side for rare steak, longer for medium steak. Cool, cover and refrigerate.
Step 3
Carve steak into thin slices and arrange on watercress, spoon dressing over.
Step 4
MUSHROOM DRESSING: Whisk oil, lemon juice and garlic in a small bowl. Dice tomatoes into 1cm pieces and add to oil mixture with parsley, mushrooms and pepper.
