Ingredients
- 1 packet mixed lettuce leaves
- 6 cherry tomatoes
- 1 pear, diced
-  5 slices pickled beetroot, cubed
-  1 handful watercress
- 100g smoked salmon
- 1⁄4 cup slivered almonds
- FOR THE DRESSING:
- 2 tbsps balsamic vinegar
- 1 tbsp honey
- 1 tsp Dijon mustard
- 1⁄4 cup extra virgin olive oil
- sea salt and freshly ground black pepper
Method
Step 1
To make the dressing, whisk together vinegar, honey, mustard, and olive oil. Season with salt and pepper.
Step 2
Assemble the salad ingredients and drizzle over the balsamic vinaigrette and top with the almonds. Serve with a fresh piece of buttered ciabatta or garlic bread.
