Salmon Potato Frittata

  • 2tbsp olive oil
  • 1 large onion, halved, sliced thinly
  • 100g Smoked Salmon strips
  • 2tsp bottled crushed garlic
  • 1kg potatoes, peeled, chopped coarsely
  • 6 eggs
  • 2tbsp water


Step 1

Heat half the oil in non-stick frying pan cook onion and garlic, until soft. Add potato; cook, stirring, about 5 minutes or until tender.

Step 2

Transfer potato mixture to medium bowl and clean frying pan. Coat inside of pan with remaining oil. Spread potato mixture in pan and top with salmon strips.

Step 3

Whisk eggs and the water in medium bowl until well combined; pour over potato and salmon mixture. Cook frittata over low heat, covered loosely with foil, about 8 minutes or until base is browned.

Step 4

Place frittata under hot grill until it has set, and top is browned. Serve frittata with a mixed green salad.
