Salmon Potato Frittata2014-11-25

- 2tbsp olive oil
- 1 large onion, halved, sliced thinly
- 100g Smoked Salmon strips
- 2tsp bottled crushed garlic
- 1kg potatoes, peeled, chopped coarsely
- 6 eggs
- 2tbsp water
Heat half the oil in non-stick frying pan cook onion and garlic, until soft. Add potato; cook, stirring, about 5 minutes or until tender.
Transfer potato mixture to medium bowl and clean frying pan. Coat inside of pan with remaining oil. Spread potato mixture in pan and top with salmon strips.
Whisk eggs and the water in medium bowl until well combined; pour over potato and salmon mixture. Cook frittata over low heat, covered loosely with foil, about 8 minutes or until base is browned.
Place frittata under hot grill until it has set, and top is browned. Serve frittata with a mixed green salad.
