Salmon & Vegetable Kebabs

  • 500g salmon fillets
  • 8 baby marrows
  • 12 cherry tomatoes
  • 1 tsp grated ginger
  • 1⁄4 cup soy sauce
  • 2 tbsps rice vinegar
  • 1 tbsp sesame oil


Step 1

Soak 12 wooden skewers in water for at least 20 minutes. Whisk together the ginger, soy, vinegar, and sesame oil. Place the salmon fillets in the marinade for 20 minutes.

Step 2

Remove the salmon from the marinade and cut the fillets into cubes and set aside. Slice the baby marrows length- ways into fat ribbons and toss in the marinade quickly. Fold the marrow ribbons and thread the fish and marrow onto the wooden skewers. End the kebabs with a cherry tomato.

Step 3

Preheat and oil your grill or grill pan to medium high. Place the kebabs over the heat and give each side about three minutes before turning. Serve garnished with fresh herbs, such as rosemary.
