Ingredients
- 1 avocado, sliced
- 1⁄2 cucumber, sliced
- 100g rocket
- 100g lettuce leaves
- 2 tbsps white wine vinegar
- 2 tbsps fresh lemon juice
- 2 tbsps olive oil
- 1 tbsp butter, melted
- 1⁄4 tsp salt
- 1⁄4 tsp black pepper
- 12 cherry tomatoes, quartered
- 400g white beans, rinsed and drained
- 400g salmon fillets, grilled and sliced
- 2 tbsps pine nuts
Method
Step 1
Combine vinegar, lemon juice, olive oil, butter salt and pepper in a small bowl, stirring well with a whisk.
Step 2
Distribute all the salad ingredients evenly in individual bowls. Drizzle each salad with about 1 tablespoon of the dressing. Sprinkle over the pine nuts and serve.
