Sausage & Apple Toad in the Hole

A classic recipe with an apple twist. Kids will love them!
Ingredients
- 1 tsp sunflower oil
- 4 pork sausages, cut in half 1⁄2 cup plain flour
- 2/3 cup milk
- 2 tsp wholegrain mustard 4 eggs
- 1 apple, sliced
Method
Step 1
Heat oven to 220°C. Brush a 8-hole Yorkshire pudding or muffin tray with oil. Brown the sausages all over in a pan over a high heat for 5 minutes.
Step 2
Meanwhile, tip the flour into a large bowl, season and make a well in the centre. Whisk the milk, mustard and eggs together, then pour a third of the mix into the well. Gradually draw the flour into the milk to form a paste, then whisk in the rest of the milk to make a smooth batter.
Step 3
Cut the sausages in half and place one half in each hole in the greased muffin tray. Place the apple slices around the sausages, then pour the batter over. Bake in the oven for 20 minutes until risen, crisp and golden. Serve with a red pepper, apple and rocket salad.
