A delicious and filling fish pie.
Ingredients
- 15ml oil
- 1 or 2 cloves garlic, crushed
- 1/2 a medium onion, chopped
- 30ml parsley, chopped
- 125ml chicken stock
- 200g cottage cheese
- 30ml cornflour
- 30ml cold water
- 800g hake fillets, skinned & thawed, cut into chunks
- 10ml lemon rind, finely grated
- 125ml frozen peas
- 5 medium sized potatoes
- 100g cheddar cheese
- 1 egg yolk
Method
Step 1
Prepare mashed potato for the topping & set aside.
Step 2
Preheat oven to 190°C. Heat oil, salt garlic & onion a few minutes, & then add parsley. Stir in chicken stock & cottage cheese. Mix until well blended. Blend corn flour with cold water & stir into the stock mixture. Cook, stirring until thickened.
Step 3
Add fish into the sauce along with the lemon rind & peas. Check seasoning & turn the mixture into a 1.5l baking dish. Spoon mash over the fish to cover completely. Sprinkle with remaining cheese. Bake for 25- 30mins until heated through & golden.
Step 4
Adult Variation: For slightly more flavour add 20ml chopped dill or fennel leaves along with the parsley. For a really special dish, substitute 150g of the hake with 150g peeled shrimp.
