A hearty snack.
Ingredients
- 2 tbsp groundnut oil
- 300g pork fillet, cut into small pieces
- 1 garlic clove, crushed
- 1 small red chili, seeded and chopped
- 2 tbsp sugar
- 1 tbsp fish sauce
- 6 tbsp light soy sauce
- 1 tbsp sesame oil
- 4 spring onions, chopped, green and white sections
- 1 bunch coriander leaves
- 1 gem lettuce
Method
Step 1
Heat oil in a large wok or saucepan and add the pork and garlic. Fry for 5-8 minutes until cooked through. Reduce the heat to medium.
Step 2
Add the chilli, sugar, sh sauce, soy sauce and sesame oil.
Step 3
Stir for a minute or two until the mixture thickens.
Step 4
Remove from the heat and add the spring onions and coriander.
Step 5
Open up the little gem lettuce, removing the leaves carefully. Place the leaves on a serving plate and spoon the mixture into each little leaf.
Step 6
Serve decorated with coriander leaves.
