- 60g golden caster sugar
- 120g unsalted butter, softened
- 1tsp vanilla or orange extract
- 175g plain flour, plus a little extra for dusting
In a large bowl, mix together the sugar, butter and choice of extract. Sift over the flour and mix until it forms a dough (if using a stand mixer, use a paddle beater). Shape into a ball, wrap in cling film, then chill for at least 30 minutes.
Preheat the oven to 180°C/gas 4. Lightly dust the work surface with flour, then roll out the dough to a thickness of 5mm. Use small cutters to cut out stars or hearts and place on a baking sheet lined with baking paper.
Bake for 15-20 minutes until golden around the edges, then transfer to a wire rack to cool.
