Ingredients
- 11⁄2 tbsps olive oil
- 1 tsp ginger, finely chopped
- 2 garlic cloves, finely chopped
- 1 spring onion, finely chopped
- 450g prawns
- 1 tbsp tomato puree
- 1 tsp chilli sauce
- 2 tsps balsamic vinegar
- 2 tsps castor sugar
- 2 tsps sesame oil
- 1⁄2 tsp salt and 1⁄2 tsp ground black pepper, to taste
Method
Step 1
Heat a wok over a high heat. Add 11⁄2 tbsps olive oil and, when it is hot, add 1 tsp finely chopped ginger, 2 finely chopped garlic cloves and 1 finely chopped spring onion. Stir-fry for 20 seconds, then add 450g prawns. Stir-fry for about 1 minute, then add 1 tbsps tomato puree, 1 tsps chilli sauce, 2 tsps balsamic vinegar, 2 tsps castor sugar and 2 tsps sesame oil, along with 1⁄2 tsp salt and 1⁄2 tsp ground black pepper. Continue to stir-fry for another 3 minutes over a high heat. Serve scattered with chopped coriander and spring onion.
