Slow roasted vegetables can accompany any meat dish, however you can easily convert it into a vegetarian meal by add- ing feta cheese crumbled on top.
- 2 red peppers, cut into strips
- 2 red onions, cut into strips
- 2 tablespoon olive oil
- 1 teaspoon butter
- 1⁄4 cup balsamic vinegar
- 1 pinch salt
- 1 pinch ground black pepper
- 1 pinch dried basil
Preheat oven to 220°C. Combine all ingredients. Reduce heat to 180°C and continue cooking, stirring occasionally, until the onions and peppers soften. Season with salt, pepper, and basil.
