Smoked Salmon Crostinis

Ingredients
- 1 thin baguette
- 2 tbsps olive oil
- 2 tbsps melted butter
- 100g Greek yogurt
- 100g cream cheese
- 2 tbsps fresh dill, chopped
- 1⁄2 tbsp fresh lemon juice
- salt to taste
- 110g smoked salmon
- dried dill and lemon rind, grated, for garnish
Method
Step 1
Preheat oven to 200°C. Slice the baguette into thin slices. Place them on a baking sheet. Stir together the melted butter and olive oil and brush the tops of the bread pieces. Place in the oven and let toast for 8-10 minutes until golden brown.
Step 2
Place the Greek yogurt, cream cheese, dill, and lemon juice into a food processor. Process till well combined.
Step 3
Cut the smoked salmon into pieces large enough to top the baguette slices. Top each slice with 1 tsp of the cream cheese mixture. Top with a slice of smoked salmon. Garnish with lemon rind and dried dill.
