Ingredients
- 150g rocket, ends trimmed, leaves washed
- 150g smoked salmon, sliced
- 1 red onion, sliced
- 100g cherry tomatoes, halved
- 2 hard-boiled eggs, sliced
- Dressing:
- 80ml Greek-style yoghurt
- 1 clove garlic
- 10 - 12 fresh basil leaves
- 1⁄2 tsp sugar
- salt to taste
Method
Step 1
In a salad bowl, combine rocket, salmon, onion, tomatoes and eggs.
Step 2
Put all the ingredients of the dressing in a blender and blend well, until you get a creamy dressing. Drizzle over salad and serve.
