Smoked Salmon & Grape Salad

Ingredients
- 160g smoked salmon pieces
- 50g Muscat grapes, halved
- A small handful of pecans
- A handful of rocket leaves
- 1 fennel bulb, thinly sliced
- Blue cheese
- FOR THE DRESSING
- Juice of 1⁄2 a lemon
- 1 tsp light soy sauce
- 2 tbsp olive oil
Method
Step 1
Flake the salmon pieces into a bowl. Add the halved Muscat grapes, rocket leaves, fennel and pecans. Scatter the blue cheese over the salad.
Step 2
Whisk up the dressing ingredients. Divide the salad between two plates, drizzle with the dressing and serve.
