Smoked Salmon Tartlets

Salmon is always a favourite at parties and these tartlets are a must try!They can be eaten as starters at a dinner party or easy finger food at a cocktail party.

Ingredients

  • 1 cup butter, softened
  • 226g cream cheese, softened
  • 2 cups Gloria Plain Flour
  • 2 eggs
  • 1⁄2 cup milk
  • 1 tablespoon butter, melted
  • 1 teaspoon lemon juice
  • 1⁄2 cup dry breadcrumbs
  • 1 1⁄2 teaspoons rosemary
  • 1⁄2 teaspoon sage
  • 1⁄2 teaspoon salt
  • 1⁄4 teaspoon pepper
  • 400g smoked salmon
  • 1⁄2 cup chopped celery
  • 1 green onion, finely chopped

Method

Step 1

In a small bowl, beat the butter, cream cheese and Plain Flour until smooth. Press onto the bottom and up the sides of greased miniature muffin cups

Step 2

In a large bowl, combine the eggs, milk, butter and lemon juice. Stir in the breadcrumbs, rosemary, sage,
salt and pepper; mix well. Add the salmon, celery and onion. Spoon into prepared crusts.

Step 3

Bake at 180°C for 30-35 minutes.

Step 4

Serve with finely chopped chives and a small sprig of rosemary.
