Everybody loves meatballs – your kids will certainly have a smile on their faces when presented with this classic meal. Plus a mid-week treat!
Ingredients
- For the meatballs
- 450g mince
- a pinch of ground cinnamon
- 3 cloves garlic, peeled & finely chopped
- salt & pepper
- 1 large egg
- a handful of freshly grated parmesan
- zest of 1 lemon
- For the tomato sauce
- Olive oil
- 2-3 cloves garlic, peeled & chopped
- bunch of fresh basil
- 2 x 400g plum tomatoes
- a dash of red wine vinegar
- salt & pepper
Method
Step 1
To make your meatballs, mix & scrunch together all the meatball ingredients in your hands & shape into marble- sized meatballs. When rolling the meatballs, run your hands under cold water every now & then – it will help to make them dense & hold their shape better. Place them on a tray & put in the fridge while you make the tomato sauce.
Step 2
Heat a pan & add a glug of olive oil to it. Gently fry the garlic & basil, then add the tomatoes & vinegar. Season & gently simmer for 30 mins.
Step 3
Heat a little olive oil in a pan & add the meatballs. Cook until well browned, then add them to the tomato sauce. Continue to simmer for 10-15 mins.
Step 4
Meanwhile, cook the spaghetti in salted water.
Step 5
When draining your pasta, reserve a little of the cooking water. Toss pasta into the meatball sauce. Add a knob of butter & the Parmesan. Toss around to coat the pasta. Add a little cooking water to loosen the sauce if needed.
