Spinach & Blue Cheese Beef Burger

Ingredients
- 1 onion, peeled and diced
- 500g beef mince
- 50g bread crumbs
- 1 egg
- 2 tbsps olive oil
- 4 burger buns, halved and toasted
- 200g baby spinach
- 11⁄2 red onion
- 1 clove garlic, finely chopped
- 100g blue cheese, crumbled
- 100g cheddar, grated
Method
Step 1
Tip the beef into a bowl with the bread crumbs, onion and egg, then mix. Divide the mixture into four. Carefully roll the mixture into balls, and gently squeeze down to flatten into patties about 3cm thick. Put on a plate, cover with cling film and leave in the fridge to firm up for at least 30 minutes.
Step 2
Heat grill or braai to medium hot and add a little olive oil. Place the patties in the pan and cook for 5-7 minutes on each side or until cooked through to liking. Remove from the pan and leave to rest on a plate.
Step 3
Meanwhile, add a splash of olive oil to the pan and add the onions and garlic. Fry until translucent and add the spinach. Cook until spinach has wilted then add the blue cheese and cheddar. Stir until the cheese has melted, remove from the heat.
Step 4
Place a patty inside each bun, then top with the spinach and cheese mixture and serve.
