Split Pea and Ham Soup2016-02-25

- 1 carrot, diced
- 1⁄2 onion, diced
- 1 tbsp olive oil
- 1 cup Probrands Split Green Peas, rinsed
- 2 cups chicken stock
- 1⁄2 cup ham, diced
- 1⁄2 tsp dried oregano
- 1 tbsp fresh thyme
In a medium pot, add the olive oil, onions and carrot and sweat them over medium low heat until tender, about 10 minutes.
Add the peas and allow them to be mixed thoroughly with the vegetables and oil.
Add the thyme, broth, ham and oregano and cook covered over medium low heat for 45 minutes or until the peas are soft. Add to a blender and purée until smooth.
Serve hot in bowls, garnished with extra ham and carrots.
