Spring Vegetable Pasta

  • 500g penne pasta
  • 200g broccoli florets
  • 100g mange tout peas
  • 200g cream cheese
  • 50g grated Parmesan
  • zest and juice of 1 lemon
  • salt and pepper, to taste


Step 1

Cook 500g penne pasta according to pack instructions, adding 200g broccoli florets and 100g mange tout peas to the pan for the final 3 minutes. When the pasta and vegetables are almost ready, remove a ladleful of cooking water from the pan.

Step 2

Add 6 tbsps of this to a pan along with 200g cream cheese, 50g grated Parmesan, zest and juice of 1 lemon and seasoning. Stir to make a smooth, creamy sauce.

Step 3

Drain the pasta and vegetables, then mix with the creamy sauce, adding some chopped chives, extra lemon juice and seasoning to taste.
