Steak Tortillas with Roasted Tomato Chilli Salsa

Ingredients
- 8 flour tortillas
- 700g sirloin steak
- 2 tbsps oil
- salt and freshly ground black pepper
- 1⁄2 head lettuce, thinly sliced
- 1 red onion, thinly sliced
- cherry tomatoes, halved, optional
- Grilled Tomato Salsa:
- 2 tbsps oil, plus more
- 2 red chillis
- 1 red onion, coarsely chopped
- 4 cloves garlic, peeled
- 6 tomatoes, halved
- salt and freshly ground black pepper
- 2 limes, juiced
- 15g fresh coriander, chopped
Method
Step 1
Heat grill to high.
Step 2
Wrap tortillas in foil and place on the top rack of the grill to warm while the steak is grilling.
Step 3
Heat grill pan over high heat. Brush the steak with oil and season with salt and pepper on both sides. Grill on one side until golden brown and slightly charred, about 3 to 4 minutes. Turn the steak over and cook to medium-rare doneness, about 3 to 4 minutes longer. Let rest 5 minutes then slice against the grain into thin slices.
Step 4
For the salsa, heat oil in a pan and sauté the chillis, onion, and garlic until soft.
Step 5
Brush the tomatoes with oil and season with salt and pepper. Grill on both sides until slightly charred and soft.
Step 6
Transfer tomatoes and chilli mixture to a blender; add the lime juice and salt and pepper and process until chunky. Add the coriander and pulse a few times.
Step 7
Fill each tortilla with some lettuce, cherry tomatoes, steak, onion and salsa. Garnish with extra coriander, if desired.
