Ingredients
- 250g couscous
- 80g asparagus
- 300g mixed vegetables, chopped (such as peppers, aubergine, baby marrow and carrots)
- 1 tsp fresh oregano, chopped
- 1 tsp fresh rosemary, chopped
- salt and freshly ground black pepper, to taste
- 2 tbsps olive oil
- 500g sirloin steak
Method
Step 1
Add 250g couscous in a bowl and pour over boiling water (enough to fully cover the couscous) then cover and leave for 2-3 minutes. When cooked, fluffy up with a fork and set aside.
Step 2
Add 80g asparagus and 300g mixed chopped vegetables such as peppers, aubergine, baby marrow and carrots to a large bowl. Add 1 tsp chopped fresh oregano, 1 tsp chopped fresh rosemary, salt and freshly ground black pepper and 2 tbsps olive oil.
Step 3
Mix until well coated. Layout the mixture on a baking tray and place in a preheated oven at 200°C and cook for 30 minutes or until everything is cooked. Slice 500g steak and add to a pan over medium high heat.
Step 4
Fry until cooked as desired. Add steak and roast vegetables to the couscous and mix well. Season with salt and pepper and serve.
