Strawberry Crêpes

  • 4 eggs
  • 11/3 cup milk
  • 1 tablespoon butter, melted
  • 1⁄2 teaspoon vanilla essence
  • 1 cup Gloria Plain Flour
  • 1 tablespoon white sugar
  • 1⁄2 teaspoon Red Seal Fine Salt
  • 25 strawberries, halved, with stems removed
  • 1 tablespoon white sugar
  • 4 sprigs fresh mint


Step 1

Combine the first seven ingredients in a large bowl and mix the crêpe batter thoroughly. Make sure there are no lumps in the batter.

Step 2

Heat a small non-stick pan over medium heat. Spray with cooking spray and using a small ladle, spoon about 3-4 tablespoons of crêpe batter into the hot pan.

Step 3

Tilt the pan clockwise so that the batter spreads evenly over the bottom of the pan. Cook for 30 seconds to 1 minute per side.

Step 4

Combine the strawberries and the sugar together.

Step 5

Remove the crêpe from the pan and place on a plate. Spread a bit of the strawberries down the centre of the crêpe. Roll and place on another plate for serving. Garnish with fresh mint.
