Strawberry Tiramisu

Ingredients

  • 450g strawberries
  • 1⁄4 cup strawberry jam
  • 2 tbsps orange liqueur
  • 1 cup cream
  • 225g Mascarpone cheese, softened
  • 3⁄4 cup icing sugar
  • 1 tsp vanilla essence
  • 220g lady finger biscuits
  • 6 sprigs mint

Method

Step 1

Set aside 6 strawberries and slice them for garnish. Coarsely chop the remaining strawberries.

Step 2

Blend 1⁄3 cup chopped strawberries, jam, liqueur and 1⁄4 cup water in blender or mini processor until smooth. Whip the cream with electric mixer to soft peaks.

Step 3

Blend the Mascarpone cheese, sugar and vanilla in a large bowl with mixer. Beat in about 1⁄4 of cream on low speed until just blended. Gradually fold in the remaining cream until blended.

Step 4

Into 6 glasses, place a few lady-fingers, breaking them up to fit. Spoon some jam mixture over the lady-fingers and top with some diced strawberries and some cream mixture. Chill for 3 hours before serving. Garnish each glass with the sliced strawberries and a sprig of mint.
