Ingredients
- 300g plain flour
- 2 tsp baking powder
- ½ tsp salt
- 1 tsp ground cinnamon
- ½ tsp grated nutmeg
- 450g mashed cooked sweet potatoes
- 100g light brown sugar
- 115g butter or margarine, melted and cooled
- 3 eggs, beaten
- 85g raisins
Method
Step 1
Preheat a 180°C oven. Grease a 9×5 in (23×13cm) loaf tin.
Step 2
Sift the flour, baking powder, salt, cinnamon and nutmeg into a small bowl. Set aside.
Step 3
With an electric mixer, beat the mashed sweet potatoes with the brown sugar, butter or margarine and eggs until well mixed.
Step 4
Add the flour mixture and the raisins. Stir with a wooden spoon until the flour is just mixed in.
Step 5
Transfer the batter to the prepared tin. Bake until a skewer inserted in the centre comes out clean, 1-1¼ hours.
Step 6
Let cool in the tin on a wire rack.
