- 3 tbsps soy sauce
- 3 tbsps olive oil
- 1 clove garlic, finely chopped
- 1⁄2 tsp crushed red chilli flakes
- salt and freshly ground black pepper to taste
- 450g pork loin, cut into cubes
- 400ml beef stock
- 2 tbsps cornflour
- 2 tbsps soy sauce
- 1 tbsp brown sugar
- 2 cloves garlic, finely chopped
- 1⁄4 teaspoon ground ginger
In a shallow dish, mix together 3 tablespoons soy sauce, olive oil, 1 clove garlic, red chilli flakes, salt, and pepper. Add pork cubes, and turn to coat evenly with marinade. Cover, and refrigerate for 3 hours.
In a saucepan, combine the stock, cornflour, soy sauce, brown sugar, garlic, and ginger. Bring to a boil, stirring constantly. Reduce heat, and simmer 5 minutes.
Preheat an the grill to high heat and lightly oil the grate. Thread the pork cubes onto skewers. Cook on grill for 15 minutes, or until meat is cooked through. Turn skewers, and baste often with sauce during cooking. Serve with a fresh salad.
