Thai Beef & Mango Salad

  • 2 sirloin steaks
  • 1 tbsp vegetable oil
  • 1 tbsp soy sauce
  • 1 ripe mango, sliced
  • 2 cups rocket
  • 1⁄2 onion, sliced
  • Handful of roasted peanuts
  • 1 garlic clove, finely chopped
  • Juice of one lime
  • 1 tbsp caster sugar
  • 1 tsp chilli flakes
  • 1⁄2 tsp pepper


Step 1

Marinade the steaks in the vegetable oil and soy sauce for at least 30 minutes. Combine the mango, rocket and onion in a large bowl.

Step 2

Heat a large frying pan over a high heat, add the steaks and cook for 1 minute on each side for medium rare or cook for an extra minute on each side for medium. Remove the steaks from the pan and transfer to a plate to rest.

Step 3

Combine the garlic with the lime juice, sugar, chilli flakes and pepper and stir them together. Pour the dressing over the pre- pared vegetables and add the peanuts. Slice the beef thinly, add to the bowl and toss to combine.
