Thai Chicken and Prawn Burgers

A quick and easy Thai inspired lunch or supper.
Ingredients
- 2 Chicken Breast, roughly chopped
- 1 Clove garlic, crushed
- 2 tablespoon(s) Thai red curry paste
- 250 grams Raw jumbo prawns, shelled and chopped
- 55 grams Fresh bread crumbs
- 200 grams Can sweet corn
- 4 Spring onions, fully chopped
- 2 tablespoon(s) Chopped coriander
- 1 Red chilli, seeded and finely chopped
- 1 Pinch of salt
- 1 tablespoon(s) Vegetable oil
- For the dipping sauce - 2 tbsps sweet chilli sauce
- 2 tbsps lime juice
- 1 tbsp soy sauce
- 1 tbsp chopped coriander
- 1 tsp chopped mint
- 1 tsp grated ginger
- 2 spring onions, finely chopped
Method
Step 1
Start by preparing the dipping sauce. Combine all the ingredients. Chill in fridge.
Step 2
Next, prepare the burgers. In a food processor blend together the chicken, garlic and curry paste until smooth, then scrape the mixture into a bowl. Add the remaining ingredients except the oil and season with a little salt.
Step 3
Using wet hands, shape the mixture into eight medium sized patties. Heat the oil in a large frying pan and cook the burgers for 3 minutes each side, until golden and cooked through. You may have to cook the burgers in batches, so keep them warm until they are ready to serve. Serve with a crunchy salad and fresh rolls. SERVES 4
