Ingredients
- 3 tbsps oil
- 50g green curry paste
- 500g chicken breast, chopped
- 400ml coconut milk
- 150ml water
- 2 red peppers, sliced
- 5 lime leaves
- 2 red chilies, sliced
- 1 tbsp fish sauce
- 1 tbsp sugar
- a handful of basil leaves
Method
Step 1
Heat up a pot over medium heat and add 3 tbsps oil. Sauté 50g green curry paste until aromatic, add 500g chopped chicken and stir to combine well with the curry paste. Add 400ml coconut milk and 150ml water and bring it to a quick boil. Add 2 sliced red peppers, 5 lime leaves, and 2 sliced red chilies.
Step 2
Lower the heat to simmer, cover the pot and let simmer for 10 minutes or until the curry slightly thickens. Add 1 tbsp fish sauce, 1 tbsp sugar, and a handful of basil leaves. Stir to mix well. Turn o the heat and serve immediately with steamed rice.
