Thai Prawn and Pork Rice Soup

Ingredients

  • 2 cups Probrands Thai Rice, according to package instructions
  • 1 cup pork fillet, sliced
  • 16 prawns, peeled and cleaned
  • 6 cups chicken broth
  • 3 cloves garlic, finely chopped
  • 2 lemongrass, cut into 5cm pieces
  • 6 slices of ginger
  • 2 tbsps fish sauce
  • 1 tbsp soy sauce
  • 1 tbsp rice wine vinegar
  • 1 tsp corn flour
  • white pepper to taste
  • 2 tbsps spring onion, chopped
  • 2 tbsps fresh coriander, chopped
  • 1 red chilli, sliced
  • Juice of 1 lime
  • 1 tsp sugar
  • 2 tbsps sesame oil

Method

Step 1

Marinate the pork in soy sauce, rice wine vinegar, white pepper and corn flour for up to an hour. Heat the pan and add the sesame oil. Stir fry the garlic and ginger until the garlic begins to turn golden. Add the pork and stir fry until the pork is no longer pink.

Step 2

Pour in the stock, lemongrass and fish sauce. Bring to a boil and allow to simmer for 3-5 minutes. Add the prawns, lime juice and sugar. Allow to cook for a minute. Add the coriander, chilli and spring onion, allow to cook until the prawns are done. Remove from the heat and serve over the cooked rice. Garnish with fresh coriander.
