Ingredients

- 500 grams Cooked Tilapia Fillets, skin off
- 1 tablespoon(s) Wholegrain Mustard
- 1 tablespoon(s) Mayonnaise
- 1 tablespoon(s) Gherkins, Chopped
- 1 tablespoon(s) Italian Parsley
- 1 tablespoon(s) Spring Onions, Chopped
- 1 Whole Egg
- 2 tablespoon(s) Breadcrumbs (+ extra for coating fish cakes)
- Coarse Salt
- Black Pepper
- SAUCE
- 30 mL Fresh Squeezed Lemon Juice
- 30 mL mayonnaise
- 30 mL Water
- Coarse Salt
- Black Pepper
Method
Step 1
Drain, clean and flake the tilapia. Chop the gherkins, Italian parsley and spring onions and then mix all the ingredients together in a large bowl.
Step 2
Heat a little sunflower oil in a shallow frying pan. Shape fish into medium rounds and then dip into either cornflour or bread- crumbs. Fry on medium heat on both sides until golden brown. Drain on paper towel. Serve slightly warmed with Lemon Mayonnaise Sauce.
Step 3
Lemon Mayonnaise Sauce: Whisk all above ingredients together and drizzle over the fish cakes just before serving.
