Tilapia Fish Cakes

Delicious for dinner or a light lunch with a side salad.

Ingredients

  • RECIPE
  • 500 grams Cooked Tilapia Fillets, skin off
  • 1 tablespoon(s) Wholegrain Mustard
  • 1 tablespoon(s) Mayonnaise
  • 1 tablespoon(s) Gherkins, Chopped
  • 1 tablespoon(s) Italian Parsley
  • 1 tablespoon(s) Spring Onions, Chopped
  • 1 Whole Egg
  • 2 tablespoon(s) Breadcrumbs (+ extra for coating fish cakes)
  • Coarse Salt
  • Black Pepper
  • SAUCE
  • 30 mL Fresh Squeezed Lemon Juice
  • 30 mL mayonnaise
  • 30 mL Water
  • Coarse Salt
  • Black Pepper

Method

Step 1

Drain, clean and flake the tilapia. Chop the gherkins, Italian parsley and spring onions and then mix all the ingredients together in a large bowl.

Step 2

Heat a little sunflower oil in a shallow frying pan. Shape fish into medium rounds and then dip into either cornflour or bread- crumbs. Fry on medium heat on both sides until golden brown. Drain on paper towel. Serve slightly warmed with Lemon Mayonnaise Sauce.

Step 3

Lemon Mayonnaise Sauce: Whisk all above ingredients together and drizzle over the fish cakes just before serving.
