  • 125g plain flour
  • 2 free - range eggs
  • 125ml mik
  • 125ml water
  • 6 sausages (choose from pork, beef, lamb or boerwors)
  • Olive oil, for greasing


Step 1

Preheat oven to 180 C. Put a half - teaspoon of sunflower oil in the bottom of each cup of a deep 12 - hole mini muffin pan set on a baking tray. Twist the sausages in half, cut and place one cup in each cup of the tin. Roast for 15 mins until golden.

Step 2

Meanwhile pour the water and milk into a jug, add the eggs, flour and pinch of salt and whisk everything together with a hand blender or wire whisk until a smooth batter forms.

Step 3

Ensuring the muffin pan is still very hot, quickly pour the batter over the sausages (leaving room for them to puff up in the oven). Bake for another 15 minutes until golden brown , well risen and crisp.
