Upside-Down Pear Pudding

Ingredients
- 2 oz (55g) plain flour
- 1 tsp baking powder
- ¼ tsp salt
- 7 oz (200g) plain chocolate
- 4 oz (115g) butter or margarine
- 2 eggs
- 4 oz (115g) caster sugar
- ½ tsp vanilla essence
- 1 tbsp strong black coffee
- 1½ oz (45g) plain chocolate chips
- 3 oz (85g) walnuts ,chopped
- 1½ lb (700g) ripe pears ,or 2×14 oz (400g) cans pear quarters ,drained
Method
Step 1
Preheat a 375°F/190°C/Gas 5 oven. Grease a 9 in (23cm) round non-stick baking dish.
Step 2
Sift the flour, baking powder and salt into a small bowl. Set aside.
Step 3
In a heatproof bowl set over a pan of simmering water, or in a double boiler, melt the chocolate and butter or margarine. Remove the bowl from the heat and let cool slightly.
Step 4
Beat the eggs, sugar, vanilla and coffee into the melted chocolate mixture. Stir in the flour mixture, chocolate chips and walnuts.
Step 5
If using fresh pears, peel, quarter and core them. Arrange the pear quarters in the prepared baking dish, with the rounded ends against the side of the dish.Pour the pudding mixture evenly over the pears.
Step 6
Bake 1 hour, covering with foil after30 minutes. Let cool 15 minutes, then hold an upturned plate tightly over the top of the baking dish, invert and unmould. Serve hot.
