Today cupcakes show up everywhere, from adult birthday parties to weddings and their decorations range from the very simple to stunning works of art.


  • 1/2 cup butter
  • 2/3 cup white sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • Zest of 1 large lemon
  • 1 1/2 cup Cake Flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup milk
  • 2 cups icing sugar sifted
  • 1/2 cup butter
  • 1 tsp vanilla extract
  • 2 tbsp milk
  • Assorted food colours


Step 1

Preheat oven to 180oC and line 12 muffin tin with paper liners.

Step 2

Beat the butter and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Beat in the vanilla extract. In a separate bowl whisk together the lemon zest, flour, baking powder, and salt.With the mixer on low speed, alternately add the our mixture and milk, in three additions, beginning and ending with the our. Scrape down the sides of the bowl as needed.

Step 3

Evenly fill the muffin cups with the batter and bake for about 17 minutes or just until set. Remove from oven and place on a wire rack to cool. Ice the cupcakes when completely cold. Use a palette knife or pipe using a star decorating tip.

Step 4

Icing: In an electric mixer, cream the butter until smooth and well blended. Add the vanilla extract and sugar. Add the milk and beat on high speed until frosting is light and fluffy.
