Try out this delicious Vietnamese inspired bowl meal that packs a powerful punch!
Ingredients
- 200g rice noodles
- 50g mushrooms, sliced
- 1 tbsp olive oil
- 4 spring onions, sliced
- 1 red chilli, sliced
- 1 green chilli, sliced
- 200g peeled cooked prawns
- 75g bean sprouts
- 100g cabbage, sliced
- 1⁄4 cup each of mint, coriander and basil leaves
- NUOC CHARM DRESSING
- 2 tbsps brown sugar
- 2 tbsps fish sauce
- 80ml lime juice
- 1 long red chilli, seeds removed, finely chopped
- 1 garlic clove, finely chopped
Method
Step 1
For the nuoc cham, stir the sugar, fish sauce and lime juice in a bowl to dissolve the sugar, then stir in chilli and garlic. Set aside.
Step 2
Prepare the rice noodles according to packet instructions, drain well, then place in a large bowl.
Step 3
Heat the olive oil in a frying pan and add the mushrooms. Sauté until cooked through. Add the onions, chillies, prawns, bean sprouts and cabbage. Stir fry for a minute to heat through but keeping the vegetables crisp.
Step 4
Place rice noodles in bowls and top with the prawn and vegetables. Add the herbs and divide the dressing over. Garnish with mint and serve warm.
