Watermelon Lollies

Ingredients
- 3 cups watermelon flesh, seeds removed
- 3⁄4 cup castor sugar
- 3⁄4 cup water
- 12 mint leaves, roughly chopped
- zest of 1 large lime
Method
Step 1
Chop up the watermelon, put in a food processor and blend until smooth.
Step 2
Place a sieve over a large bowl and pour in the mix. Discard any pulp left in the sieve.
Step 3
Bring the sugar and water to the boil, remove from the heat and add mint and zest to infuse. Cool, then sieve into the watermelon.
Step 4
Pour into lolly moulds, leaving a 1cm gap at the top. Freeze for at least 4 hours or overnight. Insert the lolly sticks when the lollies are half frozen.
