Arguably the most refreshing of fruits for lazy afternoons, watermelon pairs incredibly well with vodka. Add some fresh mint leaves to the recipe if you fancy – otherwise this simple refresher should take no more than 15 minutes to prepare. Great to start off a summer luncheon.
Ingredients
- 500 mL watermelon juice
- 60 mL vodka
Method
Step 1
Cut up about half a medium sized watermelon. You will be surprised at how much juice comes out so don’t overdo it! Blend until smooth, then pour through a sieve into a 500ml measuring jug.
Step 2
Stir in vodka to taste.
Step 3
Pour into shot glasses (30ml) and place in the freezer. After 1.5 hours, just as the ices are beginning to set, put the lolly sticks in the glasses.
Step 4
Allow to freeze for a few hours until completely set.
Step 5
Remove from the freezer and give the sticks a good turn –they should remove easily.
Step 6
Serve in an ice bucket to make the ices last a little longer –if they aren’t devoured immediately.
