Winter Sausage Casserole

This comforting one-pot casserole, makes a wonderfully warming and filling dish, perfect for sharing at the dinner table on a chilly evening. Serve with creamy mashed potato or rice and crisp green vegetables.
Ingredients
- 8 pork sausages
- 4 potatoes, peeled & cubed
- 4 carrots, peeled & cubed
- 4 sticks celery, sliced
- 3 tbsps olive oil
- 2 onions, chopped
- 4 garlic cloves, finely chopped
- 1 tsp paprika
- 2 sprigs thyme, leaves picked
- 400g tin chopped tomatoes
- 2 tbsps tomato paste
- 400ml good quality vegetable stock
- 2 bay leaves
- salt and pepper
Method
Step 1
Turn the oven to 180°C. Heat the olive oil in a heavy-based oven proof casserole pot or dish.
Step 2
Lightly brown and turn the sausages on all sides, over a medium high heat. This browing will give good colour to the dish. Remove the sausages from the casserole pot and set them aside to prepare the vegetables.
Step 3
Add the chopped onion to the casserole pot and cook over a low heat for 5 minutes, until the onion is soft. Add the garlic, paprika and thyme and cook for a further minute.
Step 4
Add the chopped potatoes, carrots and celery and stir everything around in the casserole pot so all the vegetables are coated and mixed. Cook for 5 minutes.
Step 5
Add the chopped tinned tomatoes, tomato paste, vegetable stock and bay leaves. Season and bring to a gentle simmer. Add the browned sausages back to the pot.
Step 6
Place the casserole into the oven. Cook for 40-60 minutes, until the potatoes are cooked through. Serve hot.
